With Auto-Advance turned on in your Golfshot settings, the Apple Watch will automatically move to the next hole as you play through your round.
Open the Golfshot app > Settings > GPS, Scoring, Caddie > Turn Auto-Advance to Next Hole to On to activate this feature.
With this feature set to ON, then scoring on the watch will be disabled. If you want to score on your watch turn Auto-Advance off.
